I decided to make this for my wife's 4* birthday. I followed the recipe to the letter. It turned out VERY dry. Any white sauce dish I've ever had came out creamy. This did not, and I'm not sure why. Will try again, add more cream, hope for the best. GREAT taste though, excepte nobody noticed the cinnamon at all.

Not overly impressed with this recipe. As others mentioned it was pretty bland tasting and I added garlic & shallot. Probably won't make again.

just to let you know it was great.
i think some people have bad coments because they do not have a palate to other countries food. you have to be open mind. great recipe be carefull with the cinamon if you are not used to diferent things. good guiada as usual.

I made this dish on my Birth party,. I couldnt find Pancetta so i used bacon instead, when everything was put together it tasted Wonderful, but i couldnt taste the cinnamon, next time ill ad more!

This dish is fantastic and super easy to make also. I knew I'd have a little trouble finding pancetta at my local midwestern grocery store, but they did have it in the prepackaged deli section. I didn't tell anybody that the dish had cinnamon in it-I was afraid they wouldn't even give it a chance! After they all cleaned their plates, I let the cat out of the bag. I will definitely make this again!

After watching the show with this recipe, I couldn't wait to try it , but I was disappointed once I did. I used half and half instead of heavy cream and the sauce was still way too thick, I had to add more milk to it to be able http://images.foodnetwork.com/webfood/images/myrecipebox/submit.gif

I added chicken to it also, I don't think there would have been enough meat in it otherwise. For as much fat is in this dish, I doubt I will be making it again.

After watching Giada make her Cinnamon-Panchetta Carbonara, I just knew I had to make it for my family. The ingredients weren't too expensive. Throwing it all together was easy! : I highly recommend you make this for your family tonight!

I tried this out a few weeks ago, and although the ingredients can add up a bit in price, this is SUCH a simple recipe! It's unique, has tons of flavor, and looks very pleasing (and tastes so as well! : The flavors are so complimentary to one another. I highly recommend this for a good, comfort-meal, that is easy but different enough to break any meal redundancies. Thank you, Giada! You are the BEST.
