This recipe was simply remarkable, however I cut it in half and omitted the egg yolks. Between the pancetta/bacon + grease + cream, it was rich enough. Next time I'll try this with large shells as linguine is one of my least favorite pastas...It's too messy! Giada...Bravo once again!

I absolutely loved this recipe - so easy, my 8 year old took over and made it! Small list of ingredient and quick to make...and the subtle cinnamon flavor is warm and flavorful. I thought it was awesome and I will definitely prepare it again - my husband is looking forward to the leftovers for lunch today!

I tried this recipe tonight for dinner and it was "Off the chain".
My husband is a pasta fanatic. I thought I try something different instead of spaghetti and sauce. I know how my husband LOVES fettucine and I thought I will give it a shot!!!
It turned out so PERFECT and it TASTE just as good as Giada describes it as she is tasting it after she has made it. Thanks Giada for a Deliciouso Recipe!!!!

I've made another one of Giada's recipes in the past for carbonara that had walnuts and chicken in it. One out of 5 people enjoyed it. When I made this one 5 out of 5 loved it!! Super fast and easy to make! Make sure cream and eggs are room temperature when you make this. Fresh Fettuccini is a MUST. I would add a little bit of the pasta water next time because after 10 or 15 minutes on the table - it dried out. The cinnamon is the KEY ingredient!! YOU MUST TRY IT!

This is an excellent recipe. My husband loved the addition of cinnamon to the pancetta. It just gives so much warmth to this dish. The sauce is extremely rich & heavy. I have to agree though, this recipe did not knock my socks off like her "shells" dishes.

I must admit I was skeptical at first because of the cinnamon, but it added a wonderful dimension. I don't think I'll make carbonara again without it. My store didn't have fresh fettuccine so used dried and it was great. I also added frozen peas to the cream mixture - it added great taste and color.

I made this in Jan 2007. Wonderful on a cold day... definitely a comfort dish. Didn't have pancetta, so I doubled the bacon, and used half-n-half in place of the heavy cream. I used fresh pasta (in the deli section, which I think makes a difference. Loved this! Also really good w/ grilled chicken breast.
