This is the 3rd or 4th time I have reviewed this recipe because every time I make it I am just blown away how wonderful it is!! Last night I used Marsala wine instead of sherry and it was amazing!! Don't get me wrong, I usually make it just as written and it is fantastic! I just didn't have any sherry on hand. Easy, flavorful, wonderfully delicious!! I would recommend to ANYONE who has not made a pot roast or those who have not had success at a tender and juicy pot roast! Magnificent recipe, exactly as written!

Totally amazing. I've been using my Mother-In-Law's pot roast recipe for years but saw this on the Food Network and decided to try it. Everyone loved it and the left overs were fantastic. It was easy, I was in and out of the kitchen in no time. Enjoy.

This recipe is fantastic and definitely a keeper. I made the pot roast for the first time today and it was absolutely delicious. Great with mashed potatoes or pasta.

AWESOME POT ROAST!! I didn't have cipollini onions so I used 1 large yellow onion. Blending the veges made a killer good gravy. Thank you Giada for another delicious meal! I enjoy watching your show; the production/ film quality is top notch. Being a mom myself, it's fun to watch your little girl growing up!

    BEST POT ROAST EVER!!
Made this yesterday and it was awesome....I didn't have the fresh herbs so I used 1/2 tsp of each dry and it worked great. Served the gravy over mashed potatoes. Try this, you won't be disappointed.

    Thanks Giada!

I saw this while babysitting my grandchildren, Their mother said she can't cook a roast that is tender. This looked so good I told her we would make it together. We all ate until we almost burst it was so good. The roast fell apart with the aid of two forks. The herbed flatbread was a perfect accompanyment, however I cooked that on my George Foreman grill as I don't have a stovetop grill, Definately a winner. Thank you.

This was delicious!!! I made this last night for the first time and was having company. It was a hit. There was alot of left over juice so I froze it to use later as a soup base. Will let u know how that turns out.

This roast was so tender and I did use the immersion blender to puree the vegetables. It made a wonderful gravy for the meat and for mashed potatoes. We loved it and I will definitely be making this again soon!
