I used self-rising flour and they puffed up really big and used nutella w/some whipping cream for a chocolate sauce. It a really good, light dessert not overly sweet after a big meal.

I read several reviews before making these, and noticed some people had problems with "raw" dough in the middle. One reviewer, however, pointed out that the doughnut was more like an eclair. She is right. As I was watching this episode the other day, the first thing I thought as she was making the dough was, "Wow, that's basically the same dough as a cream puff". Now that I have made them, I can see that my original assessment was correct.
When you make cream puffs, you open them up and pull out the soft center dough, leaving the shell in order to fill it with something. However, with these Italian doughnuts, the soft dough stays in the middle. It isn't raw ... it is just the center of a cream puff, and in my opinion, the very best part. I love eating the middle dough out of cooled cream puffs!
If you make these thinking "cake doughnut like Dunkin' Doughnuts" you will be disappointed. Just realize these aren't the same thing at all and enjoy. They are wonderful!

I wanted to try something different, so instead of using lemon zest I used orange zest. I also added almond extract to the dough. Instead of a coffee glaze, I made an orage glaze with powdered sugar and freshly squeezed orange juice. They were really tastey! Good recipe to play with!

Since watching this episode, i've made these four times. They are so addicting! All my friends were so impressed, but it really couldn't have been easier. They're perfect for bringing to get togethers, but be sure to at least double the batch. They go really fast.

So delicious and so easy!!!! Made them for my husband for desert. He ate almost all of them!!!! I had to stop him. This is something he does not do very often, so I was delighted. Will make them again for when my girlfriend come over.

Great recipe!!! the only problem i had was getting the hang of making the balls while i drop it in the oil to fry. After the third attempt i got the shape the way i wanted. Besides that the dough was super easy and turned out light and airy as described! THNKS GIADA! i will def make again!
