    This recipe is simple and delicious. The croutons and bacon make it even more special. It is perfect for lunch throughout a busy week. I liked it hot or cold. I also had some extra Gruyere cheese from another recipe so I sprinkled some on my croutons before putting them in the oven! I will definitely be making this again!

    Great recipe. Simple and fast. Did not have thyme so used cumin instead and worked perfectly. Also replaced bacon for prosciutto. The best part was how creamy it turned out. I was expecting it to be grainy, but was silky and smooth without any cream. Sophisticated enough for a nice dinner party.

    WOW!!! I thought it would be tasty, but I had no idea it would be that amazing!!! The croutons can be used for anything besides this soup. And the soup tastes delicious hot and cold (depending on the season. It took a long time to make but it was totally worth it!

    My husband & I had this soup warm/hot, as we don't like cold soup. I don't eat pig, so we skipped the bacon part. And I didn't make the croutons either. It's very creamy. I added a heaped tablespoon of marscapone at the end, to give it a velvety, luxurious texture & flavor.

    Followed the recipe with vegetable broth and added cayenne pepper at the end for a little kick. Very hardy for my vege diet and adding bacon for my husband the meat eater. Cream would be nice to finish it with as well.

    I used turkey bacon and prosciutto crust-ini it was a good match. My husband loved it too. I'll cook this again!

    I used the recipe and changed the total cloves of garlic to 3. I also added one medium sized yukon gold potato in small chunks and some heavy cream (I couldn't help myself! It came out really good, and I am certainly going to try it again but with leeks added next time.

    Very, very good; however, I used some of the bacon drippings and less butter. Also added more garlic, about 3 cloves total. Also used my immersion blender, which worked fine. Thanks, Giada; you make everything very simple, and your enunciation is right on.
