    Very easy and very tasty! It's been so stinkin' hot this summer, my garden basil didn't have the 'zowie' punch I would have liked. I added a fresh shallot to the dressing and that brought it back to life. My family loved the mango in it. Yum!

    Holey moley, I can't believe I haven't reviewed this yet! It is wonderful! I've been making this for years and I always have requests for the recipe. I make it early in the day, so the flavors can soak into those beans and corn, but I steal bites from the bowl all day long! The dressing is fresh and light, I do only use half the called for amount of cumin, as I'm not a fan of the spice. Winner!

    I like the beans and fresh basil dressing. I think I'm just not loving the cumin. I made it for a hike/picnic. It's not bad but there are lots of leftovers. -
    Remade it with 1/2 the cumin and loved it! I'd say just do 1/2 and see if you like it...you can always add.

    I did like this, but it ended up being somewhat 1-dimensional. Between the sweetness of the corn and of the mango (probably coupled with the mango-juice that was squeezed out in process, this ended up being VERY sweet. It's good when used as a salsa to dip salty tortilla chips in, but on its own, it's pretty bland. The beans just absorb the sweet juice and taste like everything else. I had even added a whole minced jalapeno..you can't even tell.

    A thought on prep...because this wants to marinate for several hours, but the corn needs to be grilled...I mixed everything together ahead of time, and then added the grilled corn later, which was the first thing I grilled. It sat for about 30 min together while I grilled the protein.

    Not that this fixes the sweetness issue...I think I'll leave out the mango next time. And the BF has suggested maybe a 3rd can of beans?

    LOVED it! The smell, the taste and the freshness of it was amazing! I made it for my family to go along with grilled steaks and it was a HUGE success!

    I made this for a cookout for friends. Everyone raved about it! Leftovers the next day were delicious too! This one will be a favorite in our house!

    Excellent...brought to a potluck and everyone wanted the recipe. I did use 16 oz bag of frozen corn vs. 1 cup and an extra lime as my limes were small. Next time I may a little more cumin and a little red onion...this is definately an again and again summer recipe!

    quick, easy, tastes like summer. I grill the corn until it carmelizes to add a smokey flavor...otherwise I make it just as she suggests.
