I used a bunch of cilantro instead of the basil and loved the fresh taste. You need to let the salad sit with the vinaigrette for at least an hour to really blend the flavors. Leftovers tasted great a couple of days later, that is of course if you have any leftover. :

I always watch and love your shows Giada and try a lot of your recipes. This however, is the best salad you have ever made. I love it so much that I can't stop eating it. It will be great to take to picnics because of no mayo. Bring on some more of those. Thank you so much and keep up the good work.

I made this recipe this evening accompanied by baked salmon & a summer pale ale. My husband & I both loved it. It's a healthy salad that tastes great & is easy to make. I used fresh corn cut from the cob since it is in season here in my area.
I enjoy eating meals that taste so good you forget they are good for you. Love your recipes, Giada. Keep up the good work!

Delicious! I thought the dressing needed a bit more citrus so I added one more lime and a splash of white balsamic vinegar. I also added mint, which really combines well with the lime and mango. Also, I cooked the corn my usual way (add salt and sugar to a pot of boiling water, let cook for seven minutes then remove corn from water immediately.

I added red onion, garlic powder, and a few shakes of chilli powder to the recipe. I could not stop eating it. I did use frozen Trader Joes roasted corn, excellent

I made this today with steamed crabs -- typically we steam the corn, but I saw Giada's Lobster Bake episode today and thought I'd give it a try. Well it was a HIT! I didn't have red pepper so I used an orange pepper - this was the only ingredient I didn't have and it was wonderful! My husband loved it! I plan on making it next weekend for the 4th of July! Thanks Giada, you never disappoint!

I decided to try this recipe because I had leftover corn on the cob and a mango that needed to be used. I did make a couple of minor variations. I did not have garbanzo beans so I substituted edamame. Also used roasted red bell pepper instead of fresh (both of these substitutions were to accommodate what I had on hand. My husband and I both loved this and it will definitely be a recipe that I do again. Even better the next day after the flavors had some time to blend, so I can easily see this as a dish one could do in advance for entertaining.

Delish!!! I added about another 1/2 cup of corn (just used canned corn and I bought the mango in a jar since I'm not skilled on how to pick out a fresh mango and prepare it :-P and I also used roasted cumin I found in the spice aisle at the grocery. Everyone devoured it. Yay!!
