I caught the end of the episode and only saw Giada taste it and say it melted like butter. I knew I had to try it. It was delicious. I couldn't find cannelloni shells so I used manicotti, no fresh ground white pepper so I used it in the can. I ended up only needing 8 manicotte shells (no big deal and only 2 cups of the sauce (about 4-5 cups yield. Long story short, the recipe is absolutely delicious. Next time, I'll mix it up with some of the suggestions made here.

Based on the previous reviews--I doubled the ricotta (fresh and added a bit of bottled water to make the mixture moist. Also added garlic. The rest was exactly the same as the original recipe. Very mild, yet flavorful. The crab and nutmeg blends nicely with the white pepper and basil.

I love crab, so this recipe caught my eye. The first time I made it according to the recipe. It was okay. So, I changed some things. The sauce was to thick, so I cut the flour to 1/4. Still used the same amount of butter & milk. I made crepes instead of the pasta, which I thought was much better. Sometimes pasta can get chewy when baked. I used less crab and put in a little chopped spinach, & grated onion. Also, I set the oven at 375 and baked it for 1/2 hour, on the top shelf. Giada's original recipe wasn't browned after 1/2 hour! I think next time I'll make it with chicken & peas.

I'm all for creativity but I find it works out better to try as is first then tweak just my oppinion

I thought the flavor of this recipe was mild and good.
I would make this again, the only problem I had was that the bechemel sauce turned lumpy in the oven-
but that did not affect the flavor. Also, I only used 3 cups of the bechemel sauce as my baking dish would
have overflowed if I used all of it.

It was really good! My family doesn't really like seafood, so I substituted the crab with fried chicken. And, I added a little bit of chili powder in the sauce. All in all, it was a very good recipe and I would make it again! :]

Although there proved to be more prep time than indicated, I thought the results turned out great. I also used imitation crab instead of the real thing as that would have broken my budget.

The cannelloni turned out fine even though they ended up being 'no boil' cannelloni. The filling was easy to prepare and went into the shells quickly by using a plastic bag with an end snipped.

    Try this one, it impresses!
