    This pasta was creamy and the thyme gave it such a hearty flavor. Whole family just loved this pasta! Will be keeping this recipe for sure!!! Added more cheese on top and it formed a fantastic crust :

    I just bought (almost all the ingredients to make this recipe, knowing full well that my (lame grocery store would NOT carry Creme Fraiche. I can't blame chef's for using ingredients like this in their recipes. It's not their fault that here in my area (just So. of Cinci, that there isn't a market for gourmet ingredients like this... I'm sure if I looked past the local grocer though, I could find it at a speciaty shop closer to the city... but I don't want to go on a road trip for one ingredient. I searched the web and found MANY sites that offer ways to make creme fraiche from scratch or provide a substitution... so I wanted to share that with anyone in the same dilemma as me.

    I have made this a few times now, and it is always great! This last time, the store was out of Asiago so I used Manchego cheese instead. I also used Penne instead of Fettucine. It was great! I feel that the Manchego cheese adds more flavor and the penne pasta holds the sauce more. My husband and I love this dish!

    Just a comment of finding ingredients - check out your local Costco or Sam's Club - they have a great selection of cheeses including creme fresh. Not that hard to find even if you live in the midwest.

    Just made this and loved it! Very rich and creamy. I used an Italian blend of cheese from my grocery store for both the Asiago and Parmesan (on sale, half the price of grated parmesan. I added some shredded cooked chicken breast and 8 oz sliced mushrooms which I sauteed first with 6 garlic cloves. I also used more spices than called for. Instead of creme fraiche, I used 1/2 cup sour cream and 1 1/2 cups whipping cream, as was suggested by another reviewer. The results? Deliciious. FYI, this makes plenty enough for 6 as a main dish. Which means we'll be enjoying leftovers tomorrow..

    As for the ranting and raving - make the recipe or don't make it, it's your choce. Don't know about you, but I have enough to stress about without adding recipes to the list! Happy Holidays.

    Not sure what people are complaining about...a quick search on this very site gives you two alternatives for making this yourself! Has nothing to do with food snobbery, it's common sense.

    I always make a 1/2 recipe of this, so I put 1/3 c of buttermilk into 1c of cream the night before I want to make it, put a paper towel on top & rubber band it. I've left it anywhere from 8-16 hours and it's fine as long as it's thickened up a bit.

    I love this recipe, it's got a stronger flavor than regular fettucini alfredo so it might not be for everyone but it's a big hit at my house.

    I made this dish a couple times. First Time I did it I followed the recipe exactly. It came out AWESOME!!! My fam loved it!!! 2nd time I did it instead of asiago cheese I used manchego cheese. Which is sharp, creamy, mealts beautifully and i found that it's not as tangy or has a strong smell...AND IT CAME OUT HELLA YUMMY!! Was able to find creme fraiche at fresh and easy. Creme fraiche is a soured cream but is less sour and thicker than sour cream. Over All It's A Totally Rad Recipe!! Thanks Giada!

    I'm sure this recipe is divine, but I'm sick and tired of the people on both "coasts" thinking that the rest of America can obtain all the dishy products their recipes call for! I don't know about the rest of you, but my supermarket is not likely to have fresh or dried porcini, creme fraiche, truffles, or a plethora of other ingredients that many of the NYC and LA people are used to using. It's food snobbery to continue to offer recipes with these ingredients, without including substitutions that the majority of the country might be able to locate. In this particular instance, creme fraiche CAN be homemade, but it is a 2 day process.

    And no, Food Network "Celebrities", not everyone is going to avail themselves of overpriced internet-obtainable ingredients to cook a meal.
