I'm always looking for great dishes like this to take to friends who've just had new babies. Something a little more creative than the usual poppyseed chicken! I like to make it a day ahead and take in throw-away containers. Wanted to share my modifications: I added 1/2 cup frozen corn in addition to the other veggies. Went ahead and increased whipping cream to 2 cups and added some grated mozzarella I had on hand. Will deliver w/ a whole roasted chicken (Thanks Publix some grapes/other fruit and semi-homemade cookies (I baked them didn't I?

Amazing as a side dish or main dish by adding a protein. I used more cheese and used frozen peas and carrots. I would take this for a potluck and I will adding this into my weekly rotation. Rich, Creamy and Delicous is how I would describe this dish!

I made this last night and it was FAB! I didn't quite have all of the ingredients...i substituted fresh tomatoes and half and half. It was so good. It was a snap to make and ohhhhhh sooooo good! Honestly, it was so filling it could have been our main dish, and after tasting it we didn't wcare about anything else on our plates!

I thought this was very good. I chopped and sauted some andouille sausage and added that to the dish to make it more substantial and give added flavor.

This was an excellent recipe. I agree with several others that suggest adding the salt and pepper in layers as you cook the components. When I combined all at the end I added a couple to teaspoons of red pepper flakes. Depending on your flavor preference I would recommend that you taste and adjust as you build.
