I liked it. I think this would be good to serve before a meal rather then it be a meal in its self. My hubby thought it was ok as he prefers more substance. I think I would leave the carrot out next time. It made it a little too sweet for my liking. I probably would make this again but just not as a meal.

The soup is delicious. It is so tasty, that even my grandchildren like it. Because I have gastric reflux and lactose intolerance, I do not tolerate most soups. But the creamy pepper soup is soothing to my tommy and so healthy. I look forward to trying other receipes.

My family loved this soup! Followed the recipe exactly except I added cream cheese instead of the marscapone since I had it on hand. It turned out great! I love the added depth the wine gave it. It feels so good to make a healthy and delicious soup for my family! This is going to be a regular at our house now! :

Wonderful! I didn't have all the ingredients on hand so I made a few adjustments, including roasting my own red peppers and subbing a little sour cream for mascarpone. Next time I will keep a few chunks of potatoes rather than puree everything. Definitely a keeper.

I followed the recipe exactly, except I left out the wine since I'm pregnant. It was fresh and really flavorful! It made a great light dinner.

I really liked this. I'd tried two other pepper soup recipes and been terribly disappointed. I, too added tomato paste and used fresh roasted peppers, and the No Chix vegetarian chicken broth. I really appreciate that I can always count on Giada's and Ina Garten's recipes to be consistently good.

I made this today with a bit of a variation. Eliminated the thyme and mascarpone, but added 8 oz shredded chipotle gouda just before serving. It was delicious and I called it Chipotle Gouda and Roasted Red Pepper Soup (clever, huh? ;. I will definitely make it exactly by the recipe, too, because the base was flavorful and easy. Thanks for another winning recipe, Giada!
