    I followed the recipe exactly and the soup turned out pretty sour. It was not good at all. We tried fixing it with some extra seasonings and it still wasn't good. I would not recommend it.

    Every time I make it I love it more and more. I guess any one who thinks it is bland has no idea about food. Add a little spice. Everyone at work has made this soup and loves it. Thanks Giada!

    On a rainy Saturday afternoon I put corned beef into the slow cooker for
    Ruebens later on and wondered what soup would go with it. Giada's Red Pepper Soup was amazing. I added 3 Tablespoons of Tomato Paste and some hot pepper flakes to the recipe for heat a alittle more depth of flavor. Wonderful!

    While my family loved this recipe, I found it a bit bland. Next time, I'll be trying a slightly different variation.
    The soup was a bit thin and tasting overpoweringly of red peppers. I like the flavor, but it needed more balance with some other herbs. I'm going to follow a few of the suggestions that have been posted below.

    After watiching Giada's program, my 13 yr old daughter wanted to make this soup. she followed the recipie exactly and it was delicious. LIke most recipies, we may have "customized" it to our tast by adding a little more salt and marscapone. My daughter turns 14 today and out of all the food choices she has (including going out to dinner she wants this soup for dinner tonight. So she's going to get - can't wait!

    I followed this recipe exactly as written (even using exquisite home-made chicken stock, and found it to be insufferably bland. I added a third jar of red bell peppers in an effort to improve it. I'm sorry to say it didn't help.

    This soup was delicious! I used two 16 ounce jars of red peppers to give it more pepper flavor. The mascarpone made it rich and creamy!
