I made this recipe for a family dinner party. It was a hit. Then I had to make again and shared it with my employees. One came to me and said "Chef that was incredible - when are you opening your restaurant". I'm not a chef but when other taste my food, that's what they call me. This includes my father in law who is not easy to please.

Very tasty! Don't have sweet potatos so used regular potatoes instead and still taste great!

I had a couple of cooked chicken breasts that I wanted to use up and had all the soup ingredients on hand. The combination of chicken and sweet potatoes in this soup was outstanding. After blending the soup, I added the chopped chicken breasts, heated through, and then added the mascarpone and maple syrup. Will definitely be making this again!

This soup was excellent. We used 2 tablespoons maple syrup because the first time we thought it was a little too sweet.! Marscapone made it so smooth!

This soup was excellent. It was velvety and rich. What an interesting way to cook sweet potatoes. I will definitely make this again.

I used cream cheese instead of marscapone because it was all I had on hand and it was still delicious.
