I absolutely love this recipe. It is my go-to one for chicken now. I agree that the salt instructions are a little confusing, but find that as you make it more and more, you will figure out the perfect combination and you will never turn back.

I had the Food Network In the Kitchen"App on my iPhone, so initially didn't have access to read the reviews. I looked at the picture and the ingredients and it sounded great so I wanted to make it. This was the first time I have ever cooked with rosemary and when mixing all the ingredients together I thought it smelled wonderful! At the end, after setting the chicken on paper towels to take off some of the oil, I then put the entire mixture of salt onto the chicken. My husband and I went to eat one piece and it was WAY too strong. We ended up dumping the entire batch of chicken in the trash. I re-read the recipe and it does say to "sprinkle" the salt mixture on the chicken, however I was very confused as to why they had us mixing an entire 1/4 cup of salt when just a little sprinkling might work. I think I would give this recipe another chance, because again, the lemon/rosemary/garlic smell was amazing, but I would definitely cut ALL salt out of the recipe.

I didn't read the reviews before making this and put on WAY too much salt (and I didn't even use the entire salt mixture. I would cut down the amount of salt used or omit it all together -- next time I make this, I'm just going to try it with just the lemon zest and fried rosemary as the topping. Also, I didn't read the recipe correctly and added the cornmeal before adding the chicken. It was still good, but was missing some of the flavor. Make sure you add the cornmeal AFTER you mix the chicken with the garlic/lemon zest/rosemary mixture.

Mine turned out bitter unfortunately, but I don't know if my basil was the cause.

These were great! I didn't have cornmeal so I used Panko bread crumbs. They turned out perfect. (I probably would prefer it this way instead of the cornmeal anyway.I read the reviews before making these, so I didn't over salt. Would definately make them again. I'll be using that salt for many recipes!!

Delicious! Two of us ate all the chicken. The flavors are just terrific. I have read several comments that the chicken is too salty. In the show, Giada says the salt recipe makes a lot of salt and that it will keep for a long time. There is nothing in the recipe that says to sprinkle the chicken with ALL of the salt. I just did it to taste and saved the remainder. Perfect! I will definitely make this recipe again and again and again.

Even after reducing the quarter cup of salt to a little more than a tablespoon, my boyfriend and I felt sick after eating. The salt left a bitter, nauseating taste in our mouths, and after just a few bites we were even too disgusted to make another dinner. That said, the chicken had a decent flavor on its own after being fried in the rosemary/garlic/cornmeal, so my recommendation for avoiding dehydration and frustration is to omit the salt mixture altogether. Yuck!
