Another great recipe, Giada! I just cut this into quarters & served it up. I should mention, I used frozen hash browns that I defrosted, shred the zucchini & also added a bit of grated onion.Thanks again!

These pancakes did take a while to make, from hand grating the vegetables and cooking them on the stove, but it paid off because the pancakes tasted delicious. I strayed away from the cooking directions and cooked them completely on the stove, rather than putting them in the oven. This worked out well because the pancakes became golden brown and crispy. And the mascarpone cheese on top was excellent!

Well--I decided to try this for dinner and I think it turned out as planned. Think hash browns with cheese. It was definitely salty without the marscapone cheese, but with the cheese it was quite perfect. I am giving it 4 stars since, without the cheese it IS salty, and since my kids won't eat the cheese it has to be only 4 stars. It took me 45 minutes to get it in the pan from beginning to grate, so I think the time is way off. Basically 1.5 hours from start to table. I would make it again for a heavy appetizer dish for adult friends with the dallop of cheese on each square, but not for a family dinner.

I used frozen shredded potatoes. I did have to cook longer in the oven. But it was worth it for the crunch. I found it wasn't very salty at all. But that is fine as my family likes different amounts of salt. Next time I want to try with more zucchini. Maybe half and half.

The pancake was mushy and didn't slide out of the pan so I baked it in the oven for recommended time in the pan. Couldn't cut it in squares as it was too soft. Maybe it needed some flour to bind it but it tasted delicious.

I have tried this recipe three times now -- it never turns out. It always ends up being a mess. I will say it is a tasty mess. I can't seem to get it right.
