I love this recipe! I've made it twice already and thought it was so fantastic both times! I made one change to the recipe. I added cherry tomatoes (sliced in halves instead of cranberries, because I'm not a big fan of cranberries.

The amount of couscous didn't match the amount of liquid, it came out VERY dry. The dressing was pretty bad, too. Sorry Giada...I still love your show and I will keep watching!

The roasted cauliflower with the curry is really nice. You can really play with this recipe. I agree the amount of couscous can be reduced with respect to the amount of add-ins. You can bump up the protein by adding garbanzo beans, which also work well with curry, and add some more crunch and bite with some chopped radishes and green onions. If you like it sweeter, you could add more fruit, like fresh grapes, or some mango chutney.

This was fantastic. Sometimes lemon, curry, or parsley can overtake a recipe. Not here, this recipe had the perfect balance of everything with not any one ingredient overpowering the next. And the roasted cauliflower...I always forget about this veggie and don't use it often. My wife swore she detested it until she had it roasted last night. She loved it! My contribution to this recipe was adding a clove of minced garlic to the dressing and another minced clove to the pot with the chicken stock. Next time I'll add 2 cloves to each. Thanks for a great recipe!

I read the other reviews and made the recipe accordingly. I roasted the cauliflower and it smelled heavenly. I think roasting releases some of the flavor and is key. I did not add the curry powder to the yogurt mixture as i thought would be bitter. I did everything else. the salad was fairly sweet from the cranberries. it was even sweeter several days later.

I made this last night and it was fantastic!! The only change I made was using less couscous while keeping the other ingredients' amounts the same, it made the dish very flavorful and substantial. The curry flavor really makes this a great dish!

I used a 7.6oz box of cous-cous, so adjusted the amounts of everything else accordingly (only used half a teaspoon of curry powder. I used half cauliflower & half broccoli, baked in the oven, as my husband's not keen on cauliflower. I also roasted a chicken breast at the same time as roasting the veggies, because he likes some kind of meat in everything! It was lovely, I will make it again.

I made this once and did not follow the recipe exactly and it was OK,... Made it again and followed as close as I could and it was excellent. Only change made was to add about 2 TBSP of honey to the dressing and not mix the dressing in but serve on the side to add to individual taste- as other reviews suggested.
Also made chicken from this episode and loved it.

I thought this salad looked fun to make and had great ingredients but they really didn't fit together. The califlower and curry were overpowering. Overall, it was dry and the dressing was bitter. I wouldn't make it again. Dumped it out, waste of money.

I couldn't wait for this to cool before I ate it. I loved it warm. I tried it the next day cold and liked it much better warm. I thought there was just the right amount of dressing. It kept the texture of the couscous if there was too much dressing it might make it too creamy. I substituted zucchini for the cucumbers and enjoyed the switch.
