    This was very good, I will make it again. I wanted to make my 1st risotto memorable and I did just that. The only reason I gave it four stars is that is was A LOT of stirring, my stars. I changed nothing. I brought everything at whole foods(cost me a fortune but it was fresh, delicious and recipe easy to follow. Will make again!

    I'm from New Orleans and LOVE the traditional Dirty Rice. This is a great spin off. The only thing I do differently is I use orzo instead of the rice, add a handful of basil and leave out the mushrooms because I'm just not a fan of them.

    This is now my favorite recipe of all time! We make it with asparagus instead of mushrooms and wow! My fiance makes it twice a month, at least!

    Another rave review for this recipe. I followed the recipe exactly except I added a few cloves of garlic with the other veggies. My boyfriend and his friend were amazed that I made this dish and kept asking for more. This has that great risotto flavor and texture, and it has meat in it which is why I chose the recipe in the first place. Thanks Giada!

    Yummy-O!! I also modified the recipe by using Andouille sausage and shrimp. I pretty much kept everything else the same but finished with another 2 tbs of butter at the end. My family loved it and will definitely make again.

    Although we eat a lot of risotto at restaurants, this is my first time making it at home. My husband and sons loved it. We made the recipe exactly as written. Although it was not quick to make it, it was extremely easy.

    This is a very yummy recipe!

    I modified it though. Here are my modifications:

    - Instead of putting mushrooms, bell pepper, and onion, I used A LOT OF GARLIC!
    (2 cups or a cereal bow of garlic

    - Instead of Pancetta and Italian sausage, I used Prosciutto and Coppa (Capicola.

    - Instead of 2 table spoons of butter, I used a whole block of Lurpak Danish butter for the whole recipe (1/4 cup to melt before adding the meat, 1/4 cup before you add the garlic, 1/4 cup before you add the rice and the last 1/4 cup is to be added last with the cheese.

    - I added a jar of Puck Cream cheese (Crema Dania together with the Parmesan and the left-over butter.
