    my nephew is not the main cook however, this guy WILL follow the recipe to a T. He made this for a side dish on Christmas Eve, well let me tell you, it was the dish of the night. Thanks Giada!

    and it turned out great! I really wanted to do the recipe exactly as written but I forgot to buy a red bell pepper so I added garlic. I also wasn't thinking right when I shopped for the ingredients and bought ground turkey sausage. AND I used a whole pound of it when the recipe only called for one chopped link. More meat, more mushrooms, onion, garlic. Super good. My 2 college roommates and I scraped the bottom of the pan for the last grain of rice.

    Let me first say that I went to a very high end restaurant in New Orleans and had a white truffle risotto dish - this recipe is up there with it! I've tried making risotto and couldn't seem to get it right. On my third try, I finally went and got arborio rice from an italian shop and did this recipe. Oh my gosh... it was soooooo good. I did sub the pancetta for bacon. I actually also used Veggie broth, because I was out of chicken - didn't realize until I got home from the store. This is a WINNER!

    I just made this recipe last night and it was my first time making risotto and it came out beautifully. Highly recommend and will be making again in the future. Will be a hit at my next dinner party. Thanks Giada!

    I always look forward to making this dish! My tummy can hardly wait for it to finish! : We eat it as a main dish with salad and as a side dish with steak. Such a wonderful comfort food dish! And although it does take some time, it is a very easy recipe!

    Great dish for fall and winter nights. Very filling, easy to make, tons of leftovers, and simple ingredients. We all know pancetta is essentially fancy bacon, you can defintley substitue the pancetta for bacon. Love Love Love this recipe.

    My first attempt at a Risotto and it came out beautifully. I used sweet italian sausage, regular bacon, marsala wine instead of the white and doubled the cheese. I also added garlic and subtracted the parsely, but what makes this recipe so great is that even with all the changes, the results were fabulous - Light delicately layered flavors. Definately will make my regular rotation.

    This is my go-to risotto recipe. I have used bacon instead of pancetta and a chicken or turkey sausage instead of pork. Always a crowd pleaser!

    I found this recipe easy and I love it. I only decided to make it because my husband loves risotto, he said that this was better than most of the risotto he has had at restaurants. Thanks!!!
