    I made this with just ground beef, onions, garlic powder, more wine, and crushed red pepper flakes and it was delicious!!

    Can't wait to make it again.

    I forgot to pick up pancetta at the store but didn't bother to put it in and it was still lovely! Next time though I'm going to not put in the mushrooms because a few people in my family don't like the texture, and add in the parsley when I add the onions and bell pepper. This recipe was amazing, perfect comfort food for a rare cold night in Southern California. Thanks Giada!

    This risotto was fantastic! I was getting bored of the same variations, over and over again...cream, butter, and parmesan...with the occasional peas thrown in. This risotto was loved by all...I did add some garlic and I used turkey sausage instead...this could have so many possibilities...your imagination is the only limit!

    My husband and I absolutely love risotto, and I really enjoy making it since it seems especially hard to get 'real' risotto in restaurants (instead of just rice.

    This turned out to be very tasty, a real comfort food for a chilly evening.

    The only thing I would leave out of the recipe is the parsley at the end. I chopped fresh parsley and it overpowered most of the other flavors in the risotto.

    Reheats are just as good, if not better, as well!

    I have been making risotto for years and am always looking for the "perfect" one. This is it! I've made it several times and every time I can't get over how good it is. I actually use 4 sausage links and since the pancetta at my store comes in a 4oz package, I use it all. I also use a full cup of wine. This is great as a main course with the added sausage. It's not too spicy either...my kids are 2 and 5 and they love it as well. I've made it for friends and everyone so far loves it! It's a great meal to make on a cold rainy night. I also use homemade chicken stock and with that and all of the other great ingredients, this dish has the best flavors that come together so well!

    This takes risotto as a side dish and gives it the body and flavor to exist as a main course. My girlfriend and I made this as a "girl's night in" meal, and we both adored. We plan to prepare it for our families. Really nice. I suggest more parsley than suggested in the recipe.

    Instead of having this be a side, I just used it as a one-dish meal. I skipped the pancetta and used about half a pound of hot Italian sausage. No mushrooms. Substitued sherry for wine. Delicious. So easy and my husband loved it. Serve with salad for a complete meal.
