Personally, I prefer not to have the espresso bean pieces as I find they get stuck in my teeth and they are annoying, however, I did combine espresso powder with the cocoa powder and got the same incredible coffee flavor. Also on another note, if you cannot find chocolate covered espresso beans in your area ( I could not find them, they are easy to make yourself. Just get some whole coffee beans and melt some semi sweet chocolate over a double boiler and then toss the coffee beans around in the melted chocolate and remove them to harden on some parchment paper. After they have hardened, toss them in some unsweetened cocoa powder and you have chocolate covered espresso beans!

I made these cookies for my co-workers since they all drink coffee and they all like chocolate. They were a big hit. They liked the crunch of the ground coffee beans. As an added suprise I used some extra (whole chocolate covered espresso beans as a garnish on top. Just one per cookie. I just thought it as a nice touch, and a way to use the left over beans.

Oh my word these are good! My 11 year old son, who is a Food Network junkie, watched Giada make these and decided they were our next project. Chocolate covered espresso beans are not easily found in our small town, but these cookies were well worth the effort! We followed the recipe to a T and they baked perfectly. My happy little chef was very proud of his efforts! Thanks Giada for another keeper!

I love chocolate covered espresso beans and I just had some left in my pantry. So I decided to make some : These cookies were VERY good. I totally loved them! I don't like it when things are too sweet, so I used less sugar since it already has chocolate covered espresso beans, chocolate, and more chocolate chips in the cookies. And they were perfect! This will be one of my favorite cookies forever!

I am not a rich chocolately dessert fan, but these cookies rocked!! I LOVE the espresso beans in them, what depth of flavor they give them. They were a little flat though. My eggs were not room temp. don't know if that was the problem or not. I will definitely make them again though!!
