This is absolutely the best cookie I've ever made. So decadent with how the cookie cracks a bit on the outside and is perfectly soft and chewy inside. And those bites of mint you get are just unbelievable. I made exactly as the recipe called for and will make time and time again. This recipe definitely wows a crowd!

Definitely make these cookies!!! They are moist and easy to make. Next time I'm going to try reese's pieces instead of andes, but I love the chocolate and mint combination. Really great recipe!

Great cookie!! Very easy to make, I used Ghirardelli semi-sweet chocolate (you'll buy two bars and I used Andes baking mints from baking isle. All the other ingredients I already had. Great recipe, give it a try!!

Best. Chocolate. Cookie. Ever. So easy to make. As often happens when I attempt a new recipe, I didn't have all of the proper ingredients even though I went to the store to get them. (twice I only had milk chocolate but the cookies were delicious regardless. By the way, Andes sells their mints in baking chips, which is what I used as a shortcut.

Wonderful cookie! This is the best chocolate cookie recipe I have ever found. It's been three days and the cookies are still soft on the inside. Love it.
I didn't have the Andes mints, so I used mini chocolate chips and chopped walnuts to make the 4+ ounces of add-ons. I used a standard ice cream scoop and it made 16 cookies. For the last four cookies I added dried cranberries, fantastic.
Our son is going off to college and I'm making him a recipe book. Guess which cookie recipe is going to be on the first page of the dessert section. Thank you, Giada.

Easy to make and delicious! We also tried making smaller cookies (with a cookie scoop and making the mints smaller pieces. The recipe yielded 3 dozen cookies which baked for 13 minutes. Thank you for sharing this recipe, it is now part of our future holiday tradition, cannot wait to try the expresso variation (from the video. -T
