Wow! These cookies are great, even without the icing. Made them for a cookie swap. This recipe doubles well, with no mishaps. Doubled, I got 40 cookies.

    Love, love, love these cookies!!!
I keep the dough in the freezer then just thaw and bake when needed. I skip the icing and serve a touch warm with melted chocolate for dipping. Super yummy and a crowd pleaser!!

I do believe these are the best holiday cookies ever! They were so easy to make and baked off perfectly. As the other reviewers wrote, there is way too much icing. One third of the icing recipe is more than enough. I haven't been able to keep my hands out of the cookie jar all afternoon. The recipe made 17 cookies.

This has been a cookie on the Holiday cookie tray for the last two years. My family prefers the apricots/pine nut combo.

Very good. I made half the amount of icing and still only used about half of that.

I made these last year, and they went so fast at home I had to make a second batch the same day! Brought them to work for our holiday goodie buffet and they disappeared about as fast as at home. I'm planning to make a couple of batches at one time and freezing them so I can just slice and bake as needed.

Made them during Christmas time last year and they were extremely tasty. I made them small and without the icing, not really necessary IMO.

While these cookies are delicious, the recipe for icing makes WAY too much. I even cut it in half and had a boat load left over. It only made 24 cookies.
