    We've never had eggplant, and are extremely happy we tried this dish. The meatloaf is EXCEPTIONAL and the eggplant adds a nice flavor.

    We all loved it. The nice thing about this is it's a complete meal. The side dish is built in and it's very satisfying. The only adjustment I had to make is when topping the eggplant (1 lb. seemed to be the average size at the store the amounts for the cheese and pasta sauce didn't go far enough so I just played it by ear at that point. Otherwise, delicious!

    We loved this meal! I plan to bake the eggplant instead of frying it, however this will be added to my meal repetoire!! Thanks Giada!

    For my family, it was a big hit. My husband loves eggplant and my 5 yr old son loves meat so this went over very well. My 9 yr old daughter really liked it and our 1 1/2 yr old daughter ate every last bit of her meatloaf. I found the meatloaf easy to mix and it cooks quickly this way. It was a quick and easy meal - we served with salad and a small side of plain pasta. It is hard to please 3 kids but this meal did it. For me, I do not like eggplant but it was nice that my labor wasn't all lost because I really enjoyed the meatloaf -- it was just different enough to make it very enjoyable.

    I'm a big fan of Giada and always love her recipes. But this one needs some tweaking! The recipe as written makes for an extremely salty meatloaf. I went back after dinner to watch the episode to see where I went wrong. In the show, she only adds a pinch of salt, but the recipe calls for 2 teaspoons. So if I make this again, I will drastically reduce the amount of salt. I would also add some marinara on top of the meatloaf before I add the eggplant...it needed some extra sauce.

    Saw a bit of the show where this episode was highlighted while eating a local eatery and came home to look it up. Had an eggplant sitting in my frig and was looking for something a little different to do with it. This was fabulous and easy to make. My 2 year old loved it too!
