This was wonderful. Make sure you use the SMOKED mozz. as the recipe calls for, it makes the dish. I omitted the pine nuts.

I wanted to try this recipe after seeing Giada make it on TV, but my boyfriend claimed to hate eggplant. well, that was before he tried this dish!!! it is so fabulous that he now requests it on a weekly basis! Best sauce i've ever had , also.

I got this recipe right on my 1st try! Everyone loved it, I wanted something different to make besides manicotti, I even grilled the eggplant on the George Foreman grill and they came out great! I can't wait to make this again.

I have used this dish on several different occasions. You can't go wrong with this dish and its easy to modify for a lo-carb lifestyle.

at first, i had some trouble with the grilling and salting of the eggplants, but it all came out great...which proves you can't really mess this up. it takes some time to make, but it's so good!
