    I made this on Valentines Day and it turned out fantastic! So flavorful and so easy to make. I served it over a whole wheat English muffin because tomatoes were not in season. I think it would great on anything. It looked so nice plated, everyone was very impressed. This one I will save and make again...and again!

    I really liked using the tomato for the base instead of an English muffin, to lighten it up as G. mentioned on the show. I also used half and half in my spinach sauce in an effort to cut down on the fat content and it tasted fine. The consistency was a tad runnier than shown on TV but no matter - still delicious. I also topped with turkey bacon rather than prosciutto since I already had some, and it was delicious! Will definitely make again.

    I didn't have a lot of the ingredients but I wanted to make this dish so I opted to make the filling only and serve as a side dish with fish. I made the spinach per the recipe minus the cheese (because I didn't have that either. I added mushrooms just before the spinach and the cream at the end and this was delicious, my family loved it too! I can't wait to make it with the tomato and egg. Thanks Giada.

    I made this exactly as written, except I used my silicone poached egg cups which really make a more attractive egg! It was delicious and the tomato was a great substitute for an english muffin! Loved the sauce too. I will definitely make these eggs again!
    My husband ate three of them - I had one. So most people would probably eat two. They looked so pretty we took a picture!

    This recipe was not only delicious but very easy to make. The garlic and parmesan gave the spinach mixture a delicious flavor. Also, using a tomato instead of an english muffin made the dish very light. I was impressed with how delicious this recipe was! It's a great dish to make for a brunch crowd as you can make the spinach mixture ahead of time and just poach the eggs when you're ready to eat. Yummy!!
