I've made this many times and have shared the recipe with friends..they all love it! The ease of prep/cook time is outstanding. The only thing I've tinkered with is adding an additional can of beans, and usually double the garlic. The possibilities sre endless...

This is a healthy, delicious soup, I added some crispy pancetta on top, and mashed some of the beans before adding to make the soup more consistency...wow, loved it...

This is excellent, made with vegetable broth. I used 2 1-inch pieces of good parmesan, cheese and rind, for maximum cheese flavour. Let the soup simmer a bit longer to melt the cheese and it makes the soup creamy and flavourful. Fast, simple and tasty.

I've made this soup three times now and am still amazed that a recipe so simple could taste so wonderful. I've made it with spinach and with escarole and find its a matter of taste. I've also substituted vegetable broth for my vegetarian friends. It always turns out great! Even my picky brother-in-law asked for this recipe!! Way to go, Giada!!

I've made this a few times already and I find that it tastes better the next day once the flavors have really had a chance to meld.
