WOW, these little gems are light as air that melt in your mouth with distinctive choc-coffee flavor. I have been experimenting with different recipes for an upcoming Valentine?s dinner party. I had extra eggs whites from a Zabaglione filling. This recipe filled the bill for the extra whites and will make a great parting gift for my guests.

These are really good even without the espresso powder. Don't try to make these on a high humidity damp day, or they won't dry enough. I know these as "Forgotten Cookies" by preparing them, and dropping in smaller sizes, placing them into a preheated 350 degree oven, turned the oven OFF and leave over night. Thus "forgotten." Children are intrigued with these, even tho they find it hard to wait. Finely chopped nuts are good in them, too.I have made these at Halloween time, with white chocolate mini-morsels, formed them into ghost shapes and placing 2 chocolate morels for eyes before baking.
