    This is a great recipe, and yes it does take a bit of work. However, with a food processor, grating the cheese was much easier (takes seconds. Also, has anyone else realized there is WAY too much sauce in this?? I had to use half as much milk/cream/cheese in order to have the right amount of sauce for the 1 pound of pasta. The first time I made this, I had so much sauce, I needed to make a second pound of pasta to balance it out. I opted to use pre-made seasoned breadcrumbs for the topping and it works perfectly (and less hassle. People complaining of taste, you should be seasoning it to taste before putting it in the oven. Also I like to experiment by adding different cheeses in this recipe - like smoked gouda. :

    This recipe was very flavorful with all the cheeses, though it was a bit of work with all the grating and the sauce. One thing you NEED to watch out for, in this recipe is to use cream instead of half and half because if you subsitute and go the cheaper way for this recipe, it will get ruined, and turn out gritty and not very well mixed. And even with the pancetta, if you want this as a main dish, I would suggest putting some meat of vegetables in this, since it is plain in the way that it's just pasta.

    I made this dish a few years ago and loved it but misplaced the recipe print out and finally found it again! It was a bit more work for me because of all the cheese grating but it was totally worth it, can't wait to make it again now that I found it!

    Absolutely LOVE this dish! I have a house full of boys and they always ask me to make this and I have to make double batches because it is usually gone in 5 minutes with just one batch! One of the house favs!

    OMG this is the best gourmet mac and cheese recipe EVER!! I have to explain it that way because I have picky eaters in my family. Everyone I have made this for just loves it. I also made it with the Filet and Balsamic glaze that she did on her show. AWESOME!!! The cheese is a bit expensive, so I save this for special occasions.

    This dish is easy and fun to make. Very little prep time needed and cleanup is quick. The 4 cheeses blended together to create a creamy, soft texture that melts in your mouth with every bite. This is a must for every family. My children 14, 11, 10 year twins went back for seconds. All I can say is YUM!!!

    This is delicious! I have prepared this recipe for our New Year's Eve meal for the last two years. This year my kids actually reminded me not to forget the ingredients as I was preparing for a grocery trip. It's really something they look forward to... it's become a tradition. Yes it's a bit high on the calorie side, but it's one last hurrah before our resolutions kick in!
    In regards to the other reviews, I also use 4 cups whole milk and 3 cups heavy whipping cream. I also add 1 cup of frozen petite peas (for color.

    I made this alongside a pork roast for Christmas dinner and it was fabulous! There is a bit of a difference between the web recipe and the one in her Family Dinners cookbook. The differences are that the book called for 3 Tbsp flour, 4 cups whole milk, 3 cups heavy whipping cream, and 6 oz shredded mozzarella. I followed the book version, but instead used 1/3 cup flour as per the web recipe and it turned out very nice and thick...not soupy as other reviews stated. I also let the sauce cook at medium heat for a decent amount of time to insure that it thickened up nicely. And instead of pancetta, I used applewood smoked bacon to save a little on expense. And if the ingredient list is too expensive, I would suggest considering a different recipe. Rating a recipe 2 stars partly because the ingredients are too expensive is rediculous. This dish was very tasty, turned out exactly as I expected it to, and will definitely be added to my family's favorites list!!

    I have to agree with the expensive ingredient list. While the flavor was ok, the texture left a lot to be desired. And with as much cheese as this recipe called for, it should have had a much better flavor.
