Just an FYI (@KathieFoodie: Farro is NOT gluten free. It is very low in gluten, which may be suitable for many with a low tolerance, but not for all. That being said, this recipe is really delicious and very versatile. I have made a similar recipe with orzo, but like this much better!

Great salad that is really easy to make and good for you. The farro gives good texture and heartiness. Onions were a little overpowering, so I'll start with less and add to taste next time and try red onion. Look forward to trying with different herbs like mint or basil

Tasty! I used dry herbs and added chickpeas too. I then put it atop a salad with cucumber carrots and avocado. Yum! And Vegan too!!! Perfect Lunch!

I also loved the versatility of this recipe - add or subtract the ingredients to the base recipe.
Responding to JenniferFP... Farro is Gluten Free (and high in Fiber and Magnesium so I think you meant to say that you used Farro instead of Rice to make Risotto. This is a terrific (and welcome idea for those who have special dietary needs.

Have made this before, it is one of our favorites. I sometimes tweak the recipe based on season. For example, in the summer, I only use heirloom locally grown tomatoes (various colors as well as adding carrots. In the fall, I sometimes do just carrots and tomatoes, leaving out the onion. Still just as good!

Made this today. Really versatile add whatever fresh herbs from the garden. I added smoked gouda and chicken with cucumber, cilantro basil and a smige of heat (seranno pepperin addition to the recipe everyone loved it.

I have often eaten a farrow salad at Zelo in Minneapolis. I patterned my recipe after that one and included cubes of provolone, spinach and avacado! If you like this one, you will love the one with theses additions. Delicious!!

This is our go-to summer salad. Keep it in the fridge for lunches, add a bit of chicken or hard cooked egg, add whatever fresh herbs you have on hand. I like it with lots of fresh basil and small chunks of cucumber. Play around with the ingredients and amounts, it's a friendly concoction.
