    Very good. I used risotto in place of the farro to avoid too much gluten and it worked perfectly. I also added finely chopped cucumber as I was trying to duplicate and recipe from a local restaurant. Would be great with some feta as well! Did not add the amount of salt indicated as thought that seemed to be a lot! Added extra parsley! Yummy!

    very simple and tasty. only thing is, 2 tsp of salt is WAY too much! the farro was quite salty, and i usually like salty things. next time, i will only add 1 tsp of salt! oh, and i just picked up a 3# bag of farro at Costco for under $8 .... score!!

    So delicious! It was my first time making farro and it was so easy. Think I will add more parsley, pieces of cucumbers and chopped cherry tomatoes next time (as an alternative to tabouleh.

    This salad is yummy. I came across this recipe looking for something different to make with my pouch of organic Nature's Earthly Choice Italian pearled farro. I had always prepared it using the recipe they have on the back of the bag. Ironically that recipe is Farro Salad with tomatoes and herbs. Hmm...I wonder whose recipe this is? I'm a big fan of Giada though and the recipe is good.

    Add a sunny side up EGG on top! I had something similar at a restaurant who used a duck egg atop warm farro and it was extra yummy with the yolk running down. mmmmm!

    Also, I sautéed the onions and garlic and mixed that with the farro!

    Great recipe- will definitely make again!
