    This was such a great refreshing salad. I didn't have parsley once so I just used cilantro and it was still good. The raw mushrooms were delicious and I was skeptical at first but it really comes together well. I think the big strips of Parmesan are delicious... don't use shredded its just not the same.

    My family loves this recipe. I have made it several times as a nice side salad with dinner. You can't go wrong with a Giada recipe.

    Despite not liking raw mushrooms at all I decided to try this. It is wonderful!! I don't think I have tried a Giada recipe that I don't like but this is so simple and easy I think it will be a standby for me.

    I made these last night with scallops and this was so refreshing and good. Really easy to whip up but has all the flavors. Will make again really soon. Another great recipe by Giada!!!

    I typically do not like to eat raw mushrooms but this recipe from Giada does the trick! I will be making this again. I made this a little differently with a bit of basil and mixed in a little bit of baby spinach leaves and shredded parma. It was great!!

    Light, Fresh and Easy. I served it with garlic bread as part of a 5 course meal. Everyone loved it! Next time I'm pairing it with parmesean cheese crisps!

    At first I thought, "raw mushrooms? how can that be tasty?" But it really is. Plus, I always have those ingredients on hand so it's super easy and fast to make. A great recipe for when you are sick of green salads too.
