I made this recipe tonight with my sister and it was AWESOME. It took us about two hours- i made the marinara sauce, she made the filling while the dough was chilling. We added a few small cloves of mashed garlic and a sprinkle crushed red pepper flakes to the filling which added a nice flavor to the dish. My sister is also a vegetarian, so we didn't put in the proscuitto and gave the filling a dash of salt to make up for the saltiness from the meat. Our food processor was broken so we hand-made the pasta the tradional "well" way and it still turned out great! The golden parmesan at the end really enhances the dish! We will definitely make this together again, and like the episode, it was a great family bonding experience.

Loved this recipe! It's a wonderful creative spin on other filled pastas, like stuffed shells, manacotti, etc.
As for Raffy...she's harmless. A true old-school Italian cook...she reminds me of many of my aunts, my grandmother, my mother and little bit of me...lol. Love the banter...reminds me of my huge (opininated Italian family!

Amazing, impressive, wonderful flavor! Definitely worth the effort. I used twice the amount of ricotta because the mixture seemed dry and I also added about 1 tbl of marinara to the spinach mixture as well. I'm going to keep these changes & this recipe. Excellent!

YUM! Lots of steps but surprisingly easy to make and follow recipe. I doubled the recipe and got four nice sized logs. Very delicious and you are certain to impress your guests

This was our first time ever making homemade pasta, we made it and it was so delicious. We made the dough a little too wide so our rolls were a little too long but they still tasted great. We made Ina Gartners marinara sauce for dipping. Overall excellent recipe, follow it exactly as stated.

This is a delicious dish! I hate that people are reviewing Raffy rather than the food. As for the negative comments about Raffy, you would have to be Italian to understand Aunt Raffy and her comments. Coming from an Italian family myself, it is not bitterness that makes her say what she does. I never cook infront of my mother because I will hear the same things in my kitchen. Their philosophy is, if it's good, why do you need to change it? I love when Aunt Raffy visits. I feel like I'm with family!

Excellent recipe.. just tried it yesterday.. changed a couple things on the recipe to add a little more flavor. Added shredded pork, and did it with a vodka sauce to serve... Excellent..
