    I never cook couscous before and I never think I'd like it either. But when I watched Giada makes it on her show, it looks delicious. So I dared myself to try to make it. It was really delicious. I added olives and baby spinach instead of basil. Next time I'm gonna add red bellpepper and will try feta cheese as well. Thanks Giada, I always like your shows...

    I think there was a little too much oil. But overall it was a really nice dish! I added a little cooked asparagus to go along with the cucumber and sun dried tomato! Will definitely try making it again with a few changes :]

    Great flavor and texture! Agreed that feta works nicely in this dish but I prefer the ricotta salata which is typically available at Whole Foods.

    I served this at a party for 22 people with Tri tip and Asian coleslaw! I placed the couscous in a paper bag while it was hot to remove some of the oil. The dressing was perfect. I made a vegan version with no cheese and added toasted almonds.

    This is such a good recipe! Delicious. For those who can't find ricotta salata, The only place I was able to find it was in the specialty cheese section of wegmans. No one else seems to have it. Maybe also a specialty Italian store or cheese shop?

    I must have toasted the couscous a little too long, because it became hard instead of crunchy. I plan to try the recipe again tonight with some minor changes: fresh tomatoes instead of sun-dried, mozzarella chunks instead of the ricotta salata. This salad has a lot of potential depending on your taste.

    I LOVED this dish, my husband, thought it was dry. I had to use feta as well, but thinking that next time some fresh roma's and maybe a little more of the dressing will help moisten it up. Thanks for a great easy dish!!
