    But the taste was awesome - the vinaigrette was a nice added touch. I just fried the potatoes after they fell apart. I used fingerling potatoes so they are longer then new potatoes and that might be why they fell apart. They were still delicious... my family loved the taste!

    This is a great new way for me to make my potatoes. I did change a few things though. I did not use the vinaigrette because I thought there was enough oil already. I simply squeezed a fresh lemon over the potatoes when they were done frying. I then tossed them with salt, pepper and diced chives since I do not like thyme. It was so good, my family ate them up fast. And the potaoes were not cut in half on the show.

    I don't think the potatoes were cut in half in response to another comment.
    Watch the program when it repeats. They are fabulous just the way the recipe is written here.

    I like! For mine, I steamed the potatoes first. I had a few that sort of fell apart when I smashed them...Giada's were perfect of course, but I just threw them in. I dout it would be different if I boiled them. I didn't cook them as long as she did to get them crusty...Next time I will cook the potatoes ahead of time and keep them in the fridge for an easy go to side.

    In the show, the potatoes were cut in half, but that's not mentioned here in the recipe. That would make the "smashing" part easier, and the end result is sort of a thick disk shape. I haven't had them yet, but I can't wait!!! They looked delicious.

    These were the best potatoes I have ever had. I could not believe the flavor and the texture was amazing. This in the only way I want to make my potatoes from now on. So, So good!!

    I saw this recipe today on t.v. and wanted to try it the same day. I used lemon pepper instead of fresh lemons and dried thyme instead of fresh thyme and they were so yummy! I is nice to be able to know how to have potatoes cooked differently. This is a plus in my book!! THANKS GIADA!!
