I liked the firm crust and the tender zucchini. I have used a flour coating that was tasty, but mushy?

After tasting wonderful Panko breaded zucchini sticks at an LA establishment, I tried this recipe. I'm somewhat disappointed. The Panko crumbs did not adhere very well to the zucchini and I had more crumbs in the oil than on the sticks. Also, the Parmesan cheese seemed to be a bit too much. I followed the recipe exactly as printed. I will probably modify this recipe as I continue to search for a good recipe for Panko breaded zucchini sticks.

This was very good. My husband loved it. It was the second time I made it and turned out much better the second time around. I coated the zucchini in flour before dipping in the egg. It helped everything stick. The first time I made it the breadcrumbs/cheese did not stick well.

Tried this recipe last night and loved it so much, I had to write my first FoodTV review. Definitely recommend dredging zucchini in flour first. I only had Romano cheese, but it still turned out fabulous. Added garlic powder & pepper to the breadcrumb mixture for extra flavor. The zucchini turned out so crisp, even after they cooled down. The Panko makes all the difference. I'm going to try this Panko/cheese breading next time I do chicken strips. Great recipe!

I made these with regular bread crumbs and they were fine, but I will try them with the Japanese bread crumbs next time.
