i made this as an appetizer last night and they turned out great. the zucchini were moist and sweet, but make sure that you dredge them in eggs, then heavily coat them with panko otherwise most of the panko will fall off. mine tuerned out perfect. will definitely make this again.

I didn't want to fry the zucchini so, since it was already on the baking sheet, I baked it in a 400 degree oven till the cheese was brown and it was YUMMY!!!! So much easier than frying and healthier, too! I will definitely make this again.

I found the zucchini to be under cooked when using this recipe. Atleast per my taste. If was cooked anlonger it would burn the crispy crust.
