I had a little trouble keeping the oil temp consistent, and you can't put too many zucchini in the panko after egging them or it'll get clumpy and messy. Making this for a family of 5 is a little tedious, but overall they came out good.

This is so easy to make and very dilicious. Highly recommended for those families that have teenage kids who doesn't like vegetables.

This is a good twist on fried zucchini. I used regular breadcrumbs and they turned out great.

My girlfriend and I tried baking the zucchini instead of frying it. They came out great. Light and tasty. We just sprayed the pan with olive oil. We also cut up squash and mushrooms and baked them as well.

A super recipe Giada, and good way to get husband/kids to eat zucchini... a lite dusting of cornstarch on zuchs b4 egg dip to help hold crispy crust -try dipping in marinara sauce too!

Pretty good recipe, however, for those of you who had trouble with the breadcrumbs adhering, I suggest that you lightly flour the zucchini first then dip in egg then breadcrumbs. Works much better.

I didn't have the correct cheese or breadcrumbs on hand, but I think it turned out okay. If I try it again I will either use the correct stuff or just add my own spices. I also had some of the breading fall off while frying, but it was better than my previous experiences. Overall, I would like to try this again.
