I love this recipe! The family never liked Zucchini but with this recipe they eat it and want more.

Panko is my new favorite ingredient. They give a great crunch factor. This recipe is crunchy on the outside and creamy on the inside. Really, really good!

This was not difficult to make. Instead of making 12 rolls, I made 8 with the same amount of ingredients (I had left over filling. It was so good! I was complemented by my boyfriend and grandmother was even impressed!

I dusted the zucchini with cornstarch (as I do when frying eggplant before dipping in egg and panko/cheese crumbs. Had no problem adhering and the cornstarch helps make it very crispy and not flourery. Husband loved it and he really doesn't like zucchini.

i love the taste but the prep was way more than 15 minutes. I had a hard time getting the coating to stick, and its a bit tedious. however, i did think it was worth the trouble and will make them again.

uh...i have NO idea how you folks got your panko bread crumbs to stick to the zucchini.
i tried applying the bread crumbs, dipping in egg batter and applying more bread crumbs... i tried what was suggested, i tried it all and i gave up.
how?
