Ingredients
  • 6 large eggs
  • 2 tablespoons whipping cream
  • 1/2 teaspoon salt, plus a pinch
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 12 ounces asparagus, trimmed, cut into 1/4 to 1/2-inch pieces
  • 1 tomato, seeded, diced
  • Salt
  • 3 ounces Fontina, diced
Directions

Preheat the broiler. Whisk the eggs, cream, 1/2 teaspoon salt, and pepper in a medium bowl to blend. Set aside. Heat the oil and butter in a 9 1/2-inch-diameter nonstick ovenproof skillet over medium heat. Add the asparagus and saute until crisp-tender, about 2 minutes. Raise the heat to medium-high. Add the tomato and a pinch of salt and saute 2 minutes longer. Pour the egg mixture over the asparagus mixture and cook for a few minutes until the eggs start to set. Sprinkle with cheese. Reduce heat to medium-low and cook until the frittata is almost set but the top is still runny, about 2 minutes. Place the skillet under the broiler. Broil until the top is set and golden brown on top, about 5 minutes. Let the frittata stand 2 minutes. Using a rubber spatula, loosen the frittata from skillet and slide the frittata onto a plate.

Excellent and easy. I sauteed a chopped shallot with the asparagus. I was hesitant to put my non stick skillet under the broiler for 5 minutes so I used a cast iron skillet. It came out perfect and was so easy! I used leftover collards instead of asparagus because it was what I had. I also used sour cream instead of heavy cream because .... it was what I had. And I used horseradish cheddar instead of Fontinia because... it was what I had. This is such a versatile recipe and so easy to adapt to what is sitting in the fridge. The cooking times were spot on, and my frittata come out exactly as it should have. Ok, let me just say... WE......HOO.....!!!!!! Love this. I have never made a Frittata before and waala, beautiful and yummy and easy and I'll be doing this again and trying all kinds of different fillings. My brain is already spinning with ideas. I added sweet peppers and onions cause, what the heck...why not? Also, did not use olive oil because I have heard not to use it with a cast iron skillet as the pan would take on the flavor of the olive oil, so I used only butter. I have never had fresh asparagus before and it was perfectly done and very tender. Hey, how can you go wrong with butter? A delicious, easy and adaptable recipe. After making it per the ingredients/amounts I made some variations: halved cherry tomatoes were sweeter and dispersed more evenly. Boursin cheese dolloped on top before going under the broiler, then spread thinly over the entire top once it started to cool a bit provided a different flavor. Delicious! Very tasty and easy. I already love all the original ingredients, but thought I would add my own spin to it and sometimes you have to improvise. I didn't have a tomato, so I used sun-dried tomatoes while sauteing the asparagus. I also added chopped green onions, sliced fresh mushrooms, diced ham, and fresh baby spinach. Topped it off with freshly grated Parmesan cheese along with the fontina. This would be perfect for brunch, supper, or any time. Husband liked it, too. It was yummy! I didn't change anything either. I did start it the night before. All I did was mix the eggs, cream, salt and pepper in a bowl and covered it and put in fridge. I cut up the asparagus, tomatoes and cheese and put each in a separate bowl and put in fridge. The next morning, I started the cooking and was done in 10 mins. this is our favorite. my wife and I make this often, especially during the asparagus season. we've tried a few changes for variety, including fresh tarragon, fire roasted tomatoes and smoked paprika. all of them were very good. I always make my eggs this way now - slimmed it way down this week by deleting cream and butter, added thyme and subbed some finely chopped pine nuts for the fontina - I know that's not at all the original recipe, but I'm taking off the lbs and still found inspiration in your recipe. Wow, this was so good! I grilled the asparagus because I was grilling some other things and added some leeks because they were ready in the garden. I also used a bit of parm instead of the fontina because that is what I had on hand. So yummy! I don't think you could mess this up if you tried! I've made this twice in the past week. It was that good the first time :) I did add some mushrooms to the recipe because I had them on hand. Since I don't normally have cream in the house, I bought it---but made a mistake and bought heavy cream rather than whipping cream. This past week, my husband, a diabetic, had part of his foot amputated due to bad eating habits and his weight. Since he has come home, I have been told I need to get all the fruits and vegetables into him I can so as to increase his ability to fight infection. Not an easy challenge for a man who's probably had two pieces of fruit (and those probably in pie) and maybe one vegetable in the past year. I made this this morning (although I had to substitute glorious asparagus for the more banal broccoli because he can only go so far so fast), and he loved it. He didn't even pick out the tomatos. Too, it was possible to do it quickly in the morning, even while trying to find my 9 year old son's homework and a clean pair of socks! I used this recipe for the technique, but made the frittata with sliced breakfast sausage and chopped red and green bell peppers. It was SO delicious!! And it was really easy--I'm young and fairly inexperienced at cooking. I was worried the eggs would be dry but I followed the recipe (covering the pan when it says to cook it undisturbed for a couple minutes) and it was moist and perfect!
