Extremely tasty! I've made this several times, and I love to take for a traveling lunch. I substitute cannelini beans for the garbanzos (personal preference

It was yummy! I used yellow squash since I was out of zuchini, and grilled it the slightest bit because I'm not a fan of raw zuchini/squash. I let it cool, tossed the salad, and then chopped up some peaunuts to garnish it with, and wha-la an amazing summer salad! Its super easy and oh so delicious. Even my meat loving bro (i'm a vegetarian had a serving

Lovely healthy summer salad. One friend said "it tastes like Summer." I added fresh mint chopped up and fresh parsley. I think the mint added a lot.

Truly light and fresh, great summer salad. I will definitely make it for my Memorial Day BBQ. Had it with fajitas and it was perfect.

great flavors! the dressing is light but flavorful and adding a nice sweet corn adds to the flavor as well. the zucchini I had was not the freshest so I can't wait to try it again with a better one.

What brand of good olive oil would you recommend for salads and eating raw?

Fresh, light and delicious. I, however, used fresh corn cut off the cob and steamed it in a small amount of water in the microwave, covered, for 30 seconds, so that it had a bit of crunch to it. I doubled the amount of corn asked for, too. Love this recipe!

I'm not a big salad person, but this was pretty good. I especially love this dressing, so light and refreshing but with a light tang from the lemon. It actually brought the flavors of the other ingredients to the foreground.
