I've made the Garbanzo Bean and Zucchini salad several times, and each time I was asked for the recipe from many that tried it. The flavors are wonderful together and what a colorful presentation! Note: It's well worth paying the extra for good parmesan cheese.

I love having different types of salad instead of the same old tomato, cucumber, pepper variety. This was a nice change and the super easy dressing was tasty and light. This one is pretty low-prep. too; you won't be stuck chopping veggies for half an hour.

This was really nice tasting and the dressing was very tasty and you may want to even make a little extra... however, the amount of Romaine she said to use was very small... four of us ate this salad and used a WHOLE head of Romaine...

I thought this was delicious, and healthy. I did add some white wine vinager as the dressing was kind of flat and extra salt. My husband who thinks salad is lettuce, tomatoes and cucumber thought it was wonderful. Next time I make it I'll add some red bell pepper just for color.

This was a great salad. I'm not a huge fan of garbanzo beans, but they weren't bad in this salad. I took the advice of one of the other reviewers and added cherry tomatoes and croutons. It was really good and a very easy side dish.

This was so easy to prepare, very light yet satisfying even as a main course salad. I confess I tweaked slightly, based on personal tastes and dinner menu. Subbed shallots for red onion and cucumber for zucchini (grilled zucchini was already on menu. Used fresh cooked corn. Next time would add cherry tomatoes. A definate go-to summer salad!
