I followed the recipe exactly, and these turned out great. Everyone in my family loved them. I made them in mini-muffin tins, so maybe the smaller portion size helped minimize the strong garlic flavor others have mentioned. Would be great for apps or a side dish for a dinner party.

If you have a food processor this might be a fine recipe but I dont. I made a double batch of these for Thanksgiving. They weren't terrible but the prep work was a little on the rediculous side chopping the garlic and tomatos. The muffins had a good flavor but were very dry and crumbly. Maybe because I am from the south but I like my corn muffins a little moist.

Yes, when I made them I only did up 1/2 the batter because I couldn't find my sundried tomatoes. I put the remaining batter in the refrigerator and made them up a couple of days later. Didn't seem to make a difference in the muffins. I'm going to make another batch today, with the sundried tomatoes. The other ones were fine with just the garlic too.

I've never made these, but to those who have: can I make the batter tonight and then just put it in the oven tomorrow.
Do they taste okay the next day??

bad combination of flavors. I'd rather just stick with a traditional corn bread anyday. good thing i made a small sample batch to test it out b/c i ended up throwing them away!!

I have never made this recipe as is but what I do is add dried cranberries or the Cran-raisins instead of the garlic and sun-dried tomatoes. My husband isn't a huge cornbread fan but he cannot get enough of my version and is always asking that I make them!

I love garlic but even I had to pass on these. I will cut the garlic in half next time or even omit it. I would mince the sun dried tomatoes instead of chop as well. Too much of a chewiness in the muffin. And...I don't think I would use the sour cream again. I think the buttermilk and egg addition would be plenty.
