    This is a great recipe but it can also be made with leftover mashed potatoes, that's how my aunt made them in the 1940's when I was a little girl.
    Just add enough flour so the mashed potatoes are not damp.
    I love the sauce too. Most people put gnocchi into a marinara sauce.

    I'm so glad that you made yours with the butter sauce. Much better that way.

    What I didn't pay much attention to was the kneading process. While it is important not to over knead it is just as crutial to knead the dough enough so the glutin can develope. The first two times I made this the result was gnocchi that fell apart in the water. Once I kneaded the dough a few more times and let it sit for about a minute the results were spectatular.

    I will probably make this again because it is so easy but it wasn't scrumptious. The butter thyme sauce doesn't bring the right flavor to the table.

    This recipe is so simple and tastes so great. I do cheat though, I buy packages gnocchi but it's still fabulous.

    Thank heavens I was cooking only for myself !! I ended up with mushy mashed potatoes as others did. I followed the recipe to a tee, I don't know what happened. I thought maybe I didn't cook them long enough...although they'd been in there for about 5 minutes & all were at the surface. Everything tasted fine to me, but it was not aesthetically pleasing. I spent all that time making lines with the fork only to end up with a mashed mush. I ate it, hope I don't get a stomach ache. Next time, store bought gnocchi will be my choice.

    I was really scared to try this recipe because other people got their gnocchi slimy and dissolving in the water and stuff, so i was really careful in following the directions. Well, it turns out that they came out just perfect! although I overused the thyme and it's overwhelming the flavor-- so becareful on that. i think it would go lovely with other kinds of herbs and cheese also.

    I absolutely loved this recipe! I was worried that it would be too above my head (kneading potatoe but it wasn't at all. It was incredibly easy and didn't require any ingridients that I didn't have on hand. It was simple and very easy to do and afterward, it tasted fantastic! It WAS a little rich with the butter and the cheese, so I'm trying to think of something else to use, but it was definitely one of the better, easier comfort food snacks I've found that I know I'll be making a lot in the future.
