    OMG. This is wonderful! Made it exactly by the recipe and wouldn't change a thing. I think it would make a great soup if you pureed part of the vegetables after cooking and added just a bit of chicken broth. I may try that with the leftovers.

    I loved the squash! I changed it up a bit by skipping the eggplant and adding asparagus and a lemon. It was a real hit with the kids and even great next day for lunch too.

    Fabulous and easy. Great go-to meal when my vegetarian friends are visiting. A little sour dough bread to sop up the juice and mmm, yum! If there are any leftovers (ha-ha it freezes beautifully.

    Oh my gosh! this was a great dish. very easy to do and very flavorful. I served it as a side dish with a tri tip roast. I was going to make rice but it just didn't need it. the toasted bread was enough for a starch. even my very picky 18 year old son liked it and thats a win for me!

    This is a wonderful,healthy dish.So different from any other vegetable dish I have ever madeI like the fact that is can either be a side dish or a main dish.Gives variety to a hum drum menu.Thanks Giada!Love your shows!
