This pesto is soooo good! I think I like it better than basil. Made it exactly as is, but next time might have just a little less lemon. My husband and I are looking forward to trying it on fish and pork!

oh my gosh, I just made this and it was the bomb dot com = I'm always trying new things and fate led me too this recipe. I had three boneless chicken breasts and not a clue what to do, but I knew I wanted to grill it. I didn't even have to go to the store lol I substituted the lemon for this yellow pomelo fruit (juice and zest, put some almonds in the oven (toasted pine nuts and toasted them in the oven and crushed them in a ziploc bag with a wrench lol I already had spinach leaves which I chopped up finely. to substitute the parmesean, I put garlic gloves in the oven and roasted them, mashed them up and added salt, pepper and honey.And I already had olive oil, salt and pepper and all that. I put the chicken on the George Foreman grill, added the pesto and OMG it was SO good! had it with black-eyed peas and asparagus #mmmm =D

Absolutely fantastic! This is the best Giada recipe I have ever tried. Dont need to change a thing. And what a great way to use my shiny new food processor.

Great tasting. Made tonight. Very easy, and I will make it again. My daughter and husband raved about it. Good job! My husband said he wanted to put it in a bowl and eat it like soup. Kinda rich soup, but just saying...

Absolutely delicious! I could have eaten up that pesto with a spoon! We added a little garlic powder in the processor as well, just because we like the flavor so much. Have made it twice already and will be again soon!

My husband and I absolutely LOVED this recipe! I did add my own spin by adding Italian Herb seasoning to the chicken breasts before cooking. I hate under cooked chicken so I cooked the breasts longer but on the cast iron grill pan which added a wonderful depth to the recipe. This is going into our recipe favorites box for sure and I have started sharing this terrific recipe. I love the spinach pesto better than the basil at this time. Thanks so much Giada!

Loved this recipe. Great flavors with the lemon, spinach and toasted pine nuts. For a different variation I will also add fresh basil next time as someone else suggested. Maybe 1 1/2 cup spinach and 1/4 cup basil. Otherwise it was perfect the way it was. So easy to make too. Thanks Giada.
