I made the pesto tonight and it was very tasty! I was hesitant to try this recipe because I thought using spinach would make it bitter but it wasn't at all. It's almost hard to believe you can make something this good so fast but it's true. Instead of chicken I had it over tortellini. At first, I thought it might be too cheesy using this type of pasta but I think the ricotta inside the pasta gave it just the right bite of flavor and balance . As previous reviewers suggested, I added garlic (2 cloves and just a couple leaves of basil to keep things interesting. I'm not sure if the basil flavor really came through but all in all this recipe is a keeper.

I LOVE this recipe. I typically double it and pour it over whole wheat penne to make it a complete meal. I also buy a rotisserie chicken from Costco to cut up into it, but if I do grill the chicken myself I think the Newman's "lighten up" balsamic dressing makes a great and easy marinade that compliments the flavors well. I also like to use seasoned salt and a pepper blend to season it. Hightly recommend it and it's soooo easy, especially if you buy the chicken already cooked!

I love this recipe! It's simple, quick, and easy. I was amazed how tasty the pesto was with the chicken. The pesto recipe is a keeper... and I envision using it with other things besides chicken.

This dish was so easy to make and fun too! It was the first time I tried to make pesto sauce and it turned out so good! It was fresh and tasty. The next time I think I will add a few garlic cloves and maybe even some basil just to give it a little twist. Otherwise, my hubby and kids (2 and 6 LOVED it!! This one will be a keeper in my home. Thanks Giada for never letting me down.

This is a refreshing twist on typical basil pesto and is delicious on salmon as well as chicken. I've added garlic, since we love it around here, but made it without it also. Even in the winter, fresh baby spinach is always available. Leftover pesto is also delicious on scrambled eggs and as a schmear on deli turkey or chicken sandwiches. It's a keeper!

This recipe was pretty easy to make, like all pesto sauces. I have had pesto sauce many times and this just wasn't my favorite. I felt over all it was too tart and bland. The second go around i left out the lemon juice and zest(peel. I added garlic(minced and a little bit of garlic salt. I added italian cheese blend instead.. It was not bad on top of chicken but next time i think i am going to stuff it inside the chicken, and than cook, to bring out all the flavors even more..yum my way!
