YUM! I've never had smoked mozzarella before. I think I may be in love now. These corn cakes were awesome and SO easy. I made them exactly as the recipe stated and I will definitely be making them again all summer.

This was really good and not as heavy as other corn cake recipes because it's mostly corn! I used fresh roasted corn, about 1/2 cup regular shredded mozzarella plus two wedges of Laughing Cow Queso Fresco & Chipotle which gave it a nice kick. I used regular breadcrumbs inside the mixture, but panko to coat the patties. I was short on time, so I put them into the freezer for about 15 minutes, which worked great. I also rubbed my grill topper with oil instead of brushing onto the patties. Great recipe!

I LOVED this recipe. I mixed half panko and wheat bread crumbs together. It was delicious and so easy. I'll be making this all summer long as my family love corn.

I saw this on TV today and ran out and bought the ingredients. I was already grilling some chicken for dinner and thought this would be so easy since I was already grilling. My little kids loved it even with the Creme Fraiche on it. Steamed some brocoli and it was a healthy meal. I did mix the olive oil and the remaining bread crumbs together then coated the cakes. I also used italian seasoned bread crumbs. I will make this again.
