I wanted so much to like this recipe. It looks great but the eggplant is mushy. I used a non-stick Forman grill and that helped not having so much oil absorbed but still, very, very mushy. Maybe if the eggplant had a marinara sauce on it instead. This was just awful.

Simply delicious!!! The creamy goat cheese complemented perfectly with the toasted pine nuts, grilled eggplant and balsamic vinegar.

I really liked this. I did not have balsamic so I used a fig balsamic and it really added a great flavor. The goat cheese really ties all the flavors together and the excess juice is great to dip your bread in.

I watch Giada make this recipe on her show and had to try it....I cut the recipe down to one eggplant because it's just me it was awesome (even tho i forgot the mint.....only thing i would change is usually i soak my eggplant in water w/salt for like 20 mins to help take away some of the bitterness so ill do that next time but the flavors blended so well .

Good. Good change from my regular salads. I didn't realize how much I like eggplant. The only thing I would change is lowering or taking out the mint.... too overpowering! It's been 2 hours since I ate it and I still have that mint taste in my mouth! Overall though, great salad!

Simply delicious!!! My husband doesn't usually like eggplant, but he loved this recipe. The creamy goat cheese was complemented perfectly by the texture of the toasted pine nuts. I served it with tandoori chicken and jasmine rice. Yumm. Even my teenage daughters were raving.
