    Incredible flavor, I did mix it up a bit. Use 2-3" Japanese Eggplant grilled on BBQ. Layered grilled red onions, eggplant, fresh roasted peppers and grapes tomato cut in half. Used Tuscan herb EVOO and really good balsamic with herb goat cheese. I make my own roasted red pepper 12 #'s @ a time and freeze them. This time they were just made. The flavors are let just say blow your mind good.

    Very delicious! I used my grill skillet - I normally roast my japanese eggplants from my garden - and followed the recipe, so delicious!!! This is definitely a keeper!!!

    This was absolutely delicious. It combined all of my boyfriend and I's favorite things; basil, pine nuts, and goat cheese. Could not find the Japanese egggplants so used a regular one. Coated in olive oil and some salt and pepper and let it set for a half hour then grilled it on the George foreman grill set at 325 for about 3 minutes. The store was out of mint but it was still stunning! Will make over and over! Thank you Giada!!!! I just love when amazing things come out of my kitchen!

    Oh my! I am NOT an eggplant person. My hubby decided to grow eggplant this year and we're trying different recipes. This one is to DIE FOR!! We didn't have goat cheese, so we used feta. The balsamic vinegar totally balanced out the feta and it was just delicious! I think I want to serve this with a favorite lamb dish! Thank you Giada!

    This is my favorite recipe. The ingredients go so well together and it is so easy to prepare! It looks and smells wonderful. I have been making it for two years now and it never gets old! I sometimes like to add grilled tomatoes as well. Adding mixed greens on top turns this dish into a meal. My husband loves this along a nice steak. Yummy!

    Deliciuos and easy. I made this for a vegetarian fare, often a challenge without pasta, and what rave reviews!!! Great job Giada, please continue to bring us wonderful ways to prepare great food fresh, fast and leave them wanting more.

    Simple, delicious ingredients make for a simple, delicious recipe. I too grilled the eggplant on the bbq along side balsamic-based marinated chicken breasts...rounded out with some crusty ciabatta and it was a light, flavorful summer dinner.

    My husband and I were pleasantly surprised how good this recipe was. I used regular eggplant and feta instead of goat cheese. Next time (and I will make this dish again I will use the called for ingredients. I plan on making this for my daughter who says she doesn't like eggplant. I am sure this will change her mind. simply the best!
