    Fabulous recipe! Enjoyed this recipe with a BBQ dinner. I made the recipe with 1 large regular eggplant, and halved all the rest of the ingredients. We grilled the eggplant on the bbq and then finished it off with all the other ingredients, right before serving. It was a hit. This will become a favorite in summer, when we grill out often. Thank you Giada for a fantastic veggie salad recipe.

    The simplest dish that got the biggest raves! My husband and I watched Giada prepare the dish as we had our morning coffee, went out and purchased the ingredients and whipped this up as the intro for supper. It is a lot of flavor for such a beautiful and easy dish.

    I forgot the chopped mint the first time, but the second time and it does add a nice bright counterpoint to all of the other flavors.

    I could see this as the base for some grilled arugula, tomato, feta and parsley during the summer!

    Love this recipe, have made it several times now. I think balsamic vinegar really does the trick here, it makes the eggplant taste like you did something fancy and gourmet to it, when in fact it couldn't have been more simple! I love goat cheese, but I think feta also works really well here so I change it up a bit. Overall, really quick, easy and healthy side dish or starter.

    I thought it wqas great, my husband didn't. (Personally I think he has bad taste. I thought the flavors were wonderfult together, they complimented each other beautifully. Great summer dish for when you've got lots of eggplant and herbs and need something new to do with them.

    Today I found regular eggplant for 88 cents each, so when I got home I started looking for recipes. I already had all of the other ingredients, except my fresh mint has gotten fried in this 100 degree plus Texas weather. My basil was still doing well, though.

    I thnk this recipe is supposed to serve six, but I just wanted a little taste, and then a little more, and I practically ate the entire bowl!

    All of the flavors complimented each other beautifully, and to top it off, it was very easy.
