    When I made this dish, I added a small amount red onion, and put everything on a bed of chopped romiane lettuce.

    My family did not really like this dish. The flavors were all so powerful (basil, goat cheese and it was just too different for our tastes.

    This recipe was easy to make & was a crowd pleaser. People who normally do not eat eggplant loved this dish. It is also very healthy and was lovely to serve.

    Served this for company.Didn't know if anyone liked eggplant so I chopped up a small amount of fancy lettace and served it along with the eggplant using some balsamic vinegar and olive oil with salt/pepper.The firt time I served this I just sliced the eggplant into 1" pieces.Next time I sliced them on an angle.Looked much better. Served this at room temp.The flavor of the mint and basil really came through. A definite keeper.The nice thing with the added lettace is thqat your guests don't feel they are insulting you by not eating the eggplant.Does not have a eggplant taste with everything else included.
